Q&A with Hannaford and Sachs
By Kristina Dryza
Kristina Dryza spoke with Hannaford and Sachs about the recent opening of the lovely restaurant, the Enchanted Fig Tree, located at Snellings Beach on Kangaroo Island.
What inspired you to open the fig tree to the public?
We have this incredible, enchanting fig tree on our property that’s been used for over 10 years for weddings and private events and we thought, 'Why not share this stunning space with the world’. It’s the perfect setting for us to bring Kangaroo Island’s marvellous produce to a wider audience.
Tell us what style of food you'll be serving...
It’s banquet-style where the canapés and entrées have a classical Mexican-feel, with a Mediterranean-themed main course, which allows us to showcase the freshest and best of the island’s produce. Dessert features Lady Holden’s secret family meringue recipe made with dried figs from the very tree guests are eating under.
What products from the island will feature on the menu?
Kangaroo Island pork, lamb, smoked bacon, goose liver and fresh seafood, usually King George Whiting caught locally on the day. Also Island Pure yoghurt and feta, Katham Springs biodynamic free range eggs and the best of the island’s olives, figs and honey.
Now you're also going to be opening up your historic shearing shed in the evenings too as a venue. Tell us more...
We’ll be opening up the family’s historic shearing shed built from sugar gum trees and old corrugated iron. The eclectic venue is adorned with chandeliers, velvet curtains, antique furniture and lit with flickering candlelights. Guests can choose from an à la carte menu, play croquet under the stars, befriend the local wildlife who often come down to visit . . . or just relax with a glass of wine and hang out with the locals.
And finally, why should tourists and locals make your popup the destination to visit on Kangaroo Island this summer?
Dining under our magical fig tree is truly a once-in-a-lifetime experience where you can savour the impressive local, seasonal produce Kangaroo Island has to offer - cooked under the expertise of Head Chef Rachel Hannaford - while soaking up the natural beauty of the island. There’s nothing like it anywhere in the world!
